Squirrel for dinner??

So, we have a new strategy for controlling Invasive Species. Drum roll. Let’s eat them!

Whilst it has long been tried and tested with Japanese Knotweed with its noted Rhubarb flavours, a “Zero waste” restaurant has taken it to a new level.

Silo in east London is doing its very best to offer tasty and innovative dishes as part of its “invasive species supper club” and include some of the following dishes on its menu.

  • Crayfish Tartlet
  • Grey Squirrel Kofta
  • Pacific oyster with pickled Himalayan Balsam buds
